For the past 24 years I have been waiting for someone to open something like this in the Memphis area so I could enjoy this type of authentic Mexican food without having to go to Mexico. I thought 24 years was long enough to wait, so I took it upon myself to bring to the American people this kind of fresh, delicious, authentic Mexican cuisine!
Mexicans on the go make a quick stop in one of thousands of “taquerias” and “torterias” to replenish energies with a nice sandwich, or an order of tacos and fresh fruit juice before they head back to work. Sometimes they are seated or often standing up on the sidewalk in a small place that has little or no room for seating.
First Choice Catering
John Woods, former owner of Catfish Corner Restaurant in Horn Lake, Mississippi began the Catfish Corner Catering Company in the Fall of 1996 as a result of the requests of his customers who desired the same quality and consistency of food at catered events that they received in his popular restaurant. The new catering business grew to the point that Woods sold his restaurant in 1997 to devote full time to his on-site catering service.
Since most of Woods’ business was repeat, he decided to expand into other types of foods, thus creating First Choice Catering. Both of Woods’ companies have received National and International recognition for the quality and consistency of food and service they deliver to their customers and for their versatility in preparing a wide variety of menu selections.
